Broccoli and Cheddar Stuffed Baked Potatoes

Ingredients:

  • 4 large baking potatoes
  • 1 cup Harvesting Good frozen broccoli, thawed
  • 1 cup shredded cheddar cheese
  • 1/2 cup Greek yogurt
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 400°F (200°C). Wash the potatoes, pierce them with a fork, and bake for about 1 hour or until tender.
  2. While the potatoes bake, steam the thawed broccoli for 5 minutes.
  3. Once the potatoes are done, cut them open and scoop most of the flesh into a bowl, leaving a thin layer inside the skin.
  4. Mash the potato flesh with Greek yogurt, salt, and pepper. Stir in the steamed broccoli and half of the cheddar cheese.
  5. Spoon the mixture back into the potato skins, top with the remaining cheese, and return to the oven for 10 minutes or until the cheese is melted and bubbly.

Broccoli Pesto Pasta

Ingredients:

  • 12 oz pasta of your choice

  • 1/4 cup grated Parmesan cheese
  • 1/4 cup pine nuts or walnuts
  • 1 garlic clove
  • 1/4 cup olive oil

Instructions:

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. Combine the thawed broccoli, Parmesan cheese, nuts, and garlic in a food processor. Pulse until finely chopped.
  3. With the food processor running, slowly add the olive oil until the mixture is smooth. Season with salt and pepper.
  4. Toss the cooked pasta with the broccoli pesto. Serve warm or cold.

Quick Broccoli and Chicken Stir-Fry

Ingredients:

  2. Add the chicken strips until browned and cooked for 5-7 minutes. Remove from the skillet and set aside.
  3. In the same skillet, add the thawed broccoli and red bell pepper. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
  4. Return the chicken to the skillet. Add the soy sauce, oyster sauce, and cornstarch mixture. Stir well to combine and cook for another 2-3 minutes, until the sauce has thickened.
  5. Serve over cooked rice.
